Beet & Carrot Dip

1 cup dry Food With Purpose Organic Salad Beets, drained

2 medium carrots

½ cup sour cream (125ml)

½ cup crumbled feta cheese (125ml)

1 green onion, chopped

1 tbsp lemon juice

½ tsp salt (2ml)

¼ tsp freshly ground pepper (1ml)
1 Place carrots in a microwaveable dish and Microwave on high for 3-4 more minutes, or until vegetables are tender. Let stand for 10-15 minutes, or until cooled slightly.

2 Pulse beets and carrots in a food processor with the sour cream, feta, green onion, and lemon juice, salt and pepper, until smooth.

3 Serve dip with your favorite crudités or Bread Chips.
