Beet & Orange Salad

1 jar of Food With Purpose Organic Salad Beets, drained

2 medium navel oranges

¼ medium red onion, thinly sliced

3 tbsp olive oil

2 tbsp white wine vinegar

2 tbsp orange marmalade

2 tbsp shelled sunflower seeds

2 tsp orange zest

½ tsp dried oregano

½ tsp salt

1 Wash beets and cook in boiling, salted water until tender.

2 Wash oranges. With a grinder, scrape 1 tsp of orange zest. Using a sharp knife peal the oranges.

3 Separate orange sections and cut each section into 3 pieces and keep them chilled in the refrigerator until ready to serve.

4 In a large salad bowl toss the beets and blend with dressing. Let it sit for ½ I the refrigerator.

5 Before serving, add orange sections and drizzled with sunflower seeds and serve adding salt and pepper to taste.
