Beet and Fruit Salad

Ingredients
1 cup Food With Purpose Organic Salad Beets, drained
1 medium lime
1 cup peeled apples
½ stick of celery, thinly sliced
2 cups preferred cubed fruits (kiwi, cantaloupe, watermelon)
¼ cup crumbled feta cheese
Vinaigrette
1 cup Food With Purpose Organic Salad Beets, drained
1 medium lime
1 cup peeled apples
½ stick of celery, thinly sliced
2 cups preferred cubed fruits (kiwi, cantaloupe, watermelon)
¼ cup crumbled feta cheese

Wash beets and cook in boiling, salted water until tender.
2 Cool, peel and dice beets into bite sized pieces.
3 Wash, core and dice apples. Promptly place apple in the limed water to avoid oxidation and browning.
4 Whisk together vinaigrette ingredients in a large salad bowl
5 After draining apple, toss all fruit and celery into the bowl with the vinaigrette
6 Add beets and gently mix with fruits.
7 Garnish with Feta cheese to your liking.
